Bug Bean Burger Recipe | Sustainable Insect Burger

Bug Bean Burger Recipe (Serves 2)

A delicious and protein-packed insect burger using dried crickets, black beans, and chickpeas.

Ingredients

  • 4 tbsp dried crickets (approx. 20g)
  • 2 heaped tbsp tinned black beans or adzuki beans
  • 2 heaped tbsp tinned chickpeas
  • 2 tbsp sage and onion stuffing mix (e.g., Paxo)
  • 1/4 small red onion, finely chopped
  • 1/4 red pepper, finely chopped
  • 8 strands fresh coriander (or parsley)
  • 1 egg
  • 2 heaped tbsp chickpea flour (Graham flour)
  • 1/2 tsp seasoning (e.g., Schwartz Season All)
  • 1 tsp coconut oil (optional)
  • 1 pinch of salt (optional)
  • 1 pinch paprika (optional)

Optional for serving: Burger buns, cheese slices, tomato, lettuce, sauces, pickles

Preparation (With or Without Food Processor)

  1. Drain the beans and chickpeas well for 10-15 minutes.
  2. Lightly crush dried crickets (not into powder) using a food processor or a rolling pin in a clean cloth.
  3. Blend together black beans, chickpeas, onion, pepper, and coriander. The mixture should be coarse, not a paste.
  4. Mix in crushed crickets, stuffing mix, chickpea flour, seasoning, and optionally coconut oil, salt, and paprika.
  5. Beat the egg and add gradually to the mixture until it holds together. A good test is lifting a portion on a fork; it should not fall off.

Cooking Instructions

  1. Preheat oven to 220°C (428°F).
  2. Spray a baking tray with cooking oil.
  3. Form burger patties, pressing firmly to prevent crumbling.
  4. Bake for 10 minutes on each side.
  5. To flip, use two spatulas for stability.
  6. Top with cheese slices and cook for an additional minute until melted.

Tips & Suggestions

Perfecting the burger takes practice. If too soggy, add more chickpea flour and egg next time. Experiment with different pulses and herbs. You can also try pan-frying instead of baking.
